Tasting notes

Rich and robust with a medium body and low acidity. The semi washed process leaves an intense natural sweetness and a heightened mouthfeel, with a well rounded finish. This is the bean people reach for when they want a comforting, nutty, chocolate leaning cup that never turns sour.

What semi washed processing does

In a fully washed coffee the fruit is stripped off before drying. In our semi washed Cerrado, the fruit of the coffee cherry stays on the bean while it dries, and the sugars in that fruit migrate inward. The result is a sweeter, rounder, heavier cup with softer acidity. It is the reason Brazilian coffee is the backbone of so many espresso blends.

Where this coffee comes from

We participate in a crop sharing program in Brazil that helps small, family owned farms bring their organic specialty coffee to the international market. Beans are hand selected by a certified Q grader, and every batch is processed and roasted in a CCOF Certified Organic facility under the USDA National Organic Program.

How to brew it

  • Espresso: fine grind, 18 g in, 36 g out, 25 to 30 seconds
  • Drip: medium grind, 1:16 coffee to water at 195 to 205°F
  • Cold brew: coarse grind, 1:8 coffee to water, steep 16 hours
  • French press: coarse grind, 4 minute steep

Questions we get asked

Is Brazilian coffee good for espresso?
It is one of the best. The heavy body, natural sweetness and low acidity give you thick crema and a shot that tastes good on its own or in milk.

Is this a low acid coffee?
Yes. Cerrado beans are naturally low in acidity and our medium-dark roast lowers it further, which makes this a common pick for people with sensitive stomachs.

Is it USDA Organic?
Yes, USDA Certified Organic and Fair Trade, roasted in a CCOF Certified Organic facility.

Does it work for cold brew?
Very well. The chocolate and nut sweetness concentrates beautifully. Grind coarse and steep 16 hours at 1 part coffee to 8 parts water.

Is it gluten free and non-GMO?
Yes to both. Coffee is naturally gluten free and organic certification prohibits GMOs.
